I think I'll just do a short and sweet mid-week treat. =D
Easy peasy Boston creme pie
1 pgk sponge cake made in to cupcakes
1 container of whipped topping (cool whip is fine)
1 pgk vanilla pudding made according to directions
3/4 whipping cream
8 oz semi sweet chocolate chips finely chopped
1-3 tablespoons milk
1)While cupcakes are cooling, combine the pudding and the whipped topping together, set aside. put whipping cream and chocolate chips in a pan on a medium low heat and slowly melt while stirring to combine thoroughly. Add the milk a tablespoon at a time if needed to make mixture smooth and medium thick consistency.
2) Poke a hole in to the middle of cupcakes and squirt the vanilla pudding mixture in to each one.
3) "Frost" each cupcake with the chocolate mixture
4) let cool and eat
Enjoy this treat for the middle of the week
